You put all your ingredients together (these are 100% clean!), store them in the freezer, and pop it into the crockpot a few hours before you're ready to enjoy it! ANYONE can do this meal prep!

Hearty Lentil Stew:
Ingredients:
-1 onion, diced
-2 ribs celery, diced
-1 red bell pepper, diced
-3 cloves garlic, minced
-2 cups sweet potatoes, peeled and diced
-1 cup red lentils
-1/2 cup washed quinoa
-1 tbs cumin
-1 tsp salt
-1 tsp black pepper
-1 tsp oregano
-5 cups vegetable stock (to be used the day of cooking)
To make:
Place all ingredients into a gallon-size ziploc bag and freeze. On the day you wish to prepare it, add 5 cups of vegetable stock to the slow cooker, then add ingredients. Cook for 6-8 hours on low or 5-6 hours on high.

Black Bean Pumpkin Chili (vegan)
Ingredients:
-3, 15 oz cans of black beans
-1, 28 oz can crushed tomatoes
-1 chopped onion
-2 cloves of garlic, minced
-1 cup of canned pumpkin
-1 chopped red pepper
-1 chopped green pepper
-2 tbs chili powder
-1 tbs ground cumin-1 tsp salt
-4 cups vegetable stock (to be used the day of cooking)
To make:
Place all ingredients into a gallon-size ziploc bag and freeze. On the day you wish to prepare it, add 4 cups vegetable stock to the crockpot followed by the ingredients. Cook 6-8 hours on low or 5-6 hours on high.
Serve with plain greek yogurt, cheese, and/or hot sauce

Beef Stroganoff
Ingredients:
-1 pound lean stew meat
-1 pound sliced baby bella mushrooms
-1 onion, diced
-1 tsp salt
-1 tsp black pepper
-2 cloves, garlic, minced
-1 cup beef stock (to be used the day of cooking)
-1 cup greek yogurt (to be used the day of cooking)
To make:
Place all ingredients into a gallon-size ziploc bag and freeze. On the day you wish to prepare it, , add beef stock and greek yogurt to the crockpot, then add the remaining ingredients. Cook on low for 8 hours. Serve with whole wheat noodles or brown rice and green beans.

Cilantro Lime Chicken with Corn and Black Beans
Ingredients:
-2 pound boneless skinless chicken thighs or breast
-1 cup corn
-1, 15-ounce can black beans
-1 orange bell pepper, diced
-1 yellow bell pepper, diced
-1 onion, diced
-Juice from 2 limes
-2 tbs chili powder
-1/2 tsp salt
-1 tsp cumin
-1/2 tsp black pepper
-2 tbs fresh chopped cilantro
To make:
Place all ingredients into a gallon-size ziploc bag and freeze (keep the chicken at the top of the bag so that it will be at the bottom of the crockpot. On the day you wish to prepare it, place all ingredients into the crockpot and cook on low 6-8 hours or high 5-6 hours.

-1 tsp curry powder

To make:
Place all ingredients into a gallon-size ziploc bag and freeze. On the day you wish to prepare it, place ingredients into crockpot and cook on low for 8 hours. Serve with brown rice and green veggies.
