Easy Grilled Veggies

Hi everyone!

Just wanted to stop and in and do a quick post about grilling veggies.

We have been enjoying this all summer long and into the Fall months. I'll admit that we still fire up the grill every now & again in the colder weather ;)

Cut your favorite summer veggies and fruits, spray with an olive oil spray, and place on the grill.

Cook until well done!

Honey Lime Turkey Mini Tacos

Honey Lime Turkey Mini Tacos

Some things are just more fun miniature!  That's why I loved making these mini tacos for the family this weekend! I was inspired by a recipe I found on Super Healthy Kids, but made some tweaks to make it my own.

Ingredients:
  • 3 tsp cumin
  • 3 tsp smoked paprika
  • 2 lb turkey tenderloin
  • 1/2 cup honey
  • 1/4 cup fresh lime juice
  • Tortilla Land Tortillas (these are made of whole wheat flour and have only 4 ingredients!)

Mango Salsa:
  • 1/4 Cup Fresh cilantro
  • 2 Cups Shredded Cabbage
  • 1 Cup Thinly Sliced Mango
  • Juice of 1 Fresh Lime
Instructions:
  1. In a small bowl combine the cumin and paprika. Rub onto turkey loin, and place in slow cooker.
  2. In another small bowl whisk the honey and lime juice together.
  3. Pour over turkey in the slow cooker. Cook on low for 6-8 hours.
  4. Shred the turkey using two forks and mix with the juices inside the slow cooker.
  5. Mix all the ingredients to create mango salsa and set aside for later.
  6. Using a circle cutter, cut out mini tortillas from a large tortilla (I made 4 minis from 1 regular Tortilla Land tortilla).  Heat in a pan until warm.
  7. Spoon the turkey into warmed tortillas and top with mango salsa.
  8. Enjoy!

Fajita Rice Bowls

Camping-Friendly Fajita Bowls

Camping Friendly Fajita Bowls
(Serves 4)

My family and I had a camping trip planned, and I always enjoy trying new recipes when we are out over the grill and campfire. I utilized my camping cutting board and knife as well as my camping stove to create a tasty dinner for the family as we were enjoying our weekend in nature.

  • 2 Cups Meat, grilled and sliced (Could use chicken, steak, or turkey cutlets)

  • 1 Tablespoon Fajita Seasoning

  • 1/2 Red, Green and Orange Bell Peppers

  • 1/2 Sliced Purple Onion

  • 1 Cup Shredded Cheese (I packed a block of cheese and a cheese shredder)

  • 1 Cup Salsa

  • Tortilla Wraps (Tortilla Land)

  • Hot Sauce

  • Salt and pepper

  • Olive oil or Coconut Oil

  • (I also suggest having foil for cooking purposes!)

To Prepare:

  1. Grill the meat: I used my camping cutting board and knife to cut a turkey cutlet into strips. However, for times sake, you could buy it already cut into strips- the butcher would do this upon request.

  2. Cut up the peppers and onions and saute them in a couple teaspoons of olive oil or coconut oil and add a touch of salt and pepper.

  3. While the meat and peppers are cooking, warm tortillas on the camping stove.

  4. Shred block of cheese for topping

  5. Lay out ingredients on the table so that the family can assemble their bowls to their liking!

Today I decided to do a "Weighted full body 10 minute workout"

Select a weight that is challenging.  I am using 12 pound weights in this video.  If you select a weight and find that you still have gas in the tank at the end then next time select a heavier weight.

Since this strength training workout is only 10 minutes, it is the perfect addition to a cardio workout to ensure that you are also fitting in strength training.

Do these three Combo moves three times through for a total of 9 minutes.  Follow up with a one minute plank hold for a total of 10 minutes.

First Combo Move (1 minute):  Squats with a Shoulder Press

Second Combo Move (1 minute): Good Mornings with a Bicep Curl

Third Combo Move (30 seconds each side):  Lunges with Bentover Tricep Kickback

Clean Eating Chicken Fajitas

My Family is ADDICTED to Mexican Food!  We love everything about it the beans, cheese, the grilled veggies, and soft doughy tortillas.  I have never been able to quite replicate those amazing Mexican restaurant Chicken Fajitas in a clean eating way.....until now>>>>>

Screen Shot 2016-07-18 at 1.53.40 PM

Here is the recipe for one of the best meals I have ever made.
<<Clean Eating Chicken Fajitas>>
Husband tested and Kid Approved (minus the onions. lol).
Fajitas Ingredients:
~1 Medium onion, cut into slices
~1 Red pepper, cut into slices
~1 Yellow pepper, cut into slices
~1.5 pounds of chicken cut into slices while meat is raw
~Tortilla Land Tortillas (clean eating wheat flour tortillas with only 4 ingredients)
Spices:
~1T Chili Powder
~1 1/2 tsp Cumin
~1/2 tsp paprika
~1/2 tsp salt
~1/2 tsp pepper
~1/4 tsp garlic powder
~1/4 tsp onion powder
~1/4 tsp oregano
~crushed red pepper flakes (optional and to taste)
Garnish:
~Fresh Cilantro and Lime Slices
Instructions:
1.Preheat oven to 400 degrees.  Put sliced peppers, onions, and chicken into a 9" x 13" casserole dish.
2.Combine the listed spice ingredients in a small bowl, stir, and then pour on top of the peppers, onions, and chicken.  Stir to coat the seasoning over the chicken and veggies.
3. Put into the oven for 20-25 minutes.  I stirred the mixture once during the cooking process.
4. While this is cooking, take out your Tortilla Land tortillas and warm each side in a pan.  These tortillas have to be cooked before using as they do not have any unnecessary additives or preservatives. Don't let this stop you from trying them because they are absolutely delicious.  I would even say better than the over processed versions at Mexican restaurants.
5.Assemble the chicken and veggie mixture inside of one of the tortillas, top with fresh cilantro (and shredded cheese if you would like), squeeze with a lime, fold the ingredients into the tortilla and enjoy!
It is >>>OMG<<< Amazing!

How to Transition to a Healthier Lifestyle

1. Believe in yourself and your vision for a healthier life.

Your past failures DO NOT MATTER.

Push aside self doubt. Put your eyes on the future and concentrate on being consistent on the below steps of Meal Planning and Prepping and YOU WILL achieve your health and fitness goals.

2. Get rid of all of the processed food in the house.

(If it is not in the house you are less likely to eat it.) If loved ones complain, ask them to please eat their processed junk food outside of the house or hide it where you can not see it. When in doubt whether an item is overly processed look on the ingredient list. Here are a few ingredients to stay away from: https://www.pinterest.com/pin/555420566519628151/

3. Start Meal Planning.

Go online or to your recipe books and find some clean recipes to make for the coming week. You will want to stick to recipes that contain whole fresh foods: lean proteins, complex carbs, fruits, veggies, and healthy fats. One site that I use to find clean eating recipes is: www.graciouspantry.com You can also find recipes and meal prep ideas that I use for my own family at www.pinterest.com/trishzelenak

4. Go to the Grocery.

Shop for your needed clean eating ingredients for the coming week based on your meal planning list. Stick to the outside of the grocery for as much as possible. Go into the aisles strategically to get specific items. Some of the things I go into the aisles for: oats, canned tomatoes and beans, coffee, nuts, whole kernel popcorn, and nut butters. Here is your guide to a healthy grocery cart: https://www.pinterest.com/pin/555420566519672905/

5. Start Meal Prepping.

I get out all of the ingredients that I will need for each recipe I am making.

Invite your family to help. I put my husband on grilling all of the lean proteins. My daughters like to put the eggs in the egg steamer to hard boil them. They also like to cut veggies. The family will appreciate your efforts more if they participate and see the work that goes into creating a healthy clean eating lifestyle for the family

I then start with anything that has a multi step process or takes a long time to cook. For example if I am preparing a slow cooker recipe or making brown rice. Both have long cook times so I start with these items first.

The next step is to work on anything that will use the same tools. For example cutting vegetables for my veggie tray and cutting veggies for a stew. I will do both of these things at once. If I crush garlic for the stew and also plan to make hummus, I will crush the garlic all at once and set aside the garlic so that it is ready for the next recipe.

Some of the things I make every week: hard boiled eggs, grilled chicken, a whole grain (brown rice, quinoa, faro, wheat berries, barley, etc.), a veggie tray w/lid (that has a small container with a healthy dip – ex: hummus), cut up fresh fruit, and a batch of blanched or roasted vegetables. I also like to make a stew or soup to freeze for later in the week when my fresh options are running low.

6. Move your body.

Whether you go to a gym or work out at home, find a type of exercise that you enjoy and works for your life. Make sure you are combining both cardio and strength training. If you would like to try out some options, I can provide you for FREE a 30 Day access to Beachbody on Demand to try dozens of different options to find what works best for you.

7. Accountability to another human.

Do not skip this step. Whether it is a best friend, mom, spouse, neighbor, a personal trainer, or online health & fitness coach (ME :)) to make sure you stay on track. You are motivated now, but that motivation is likely to fall by the way side when life takes over...that is unless you have someone to answer to so that you stay on track. It would be my pleasure to be that daily accountability partner for you.

8. Track Your Progress.

Take beginning weight, measurements, and pictures to establish a starting point. DO NOT weigh yourself frequently. In fact, I recommend that you put the scale in the back of a closet and only pull it out every 2-3 weeks to check your progress. Do not get on the scale unless you are committed to also checking your measurements. It is normal to only lose a few pounds yet drop drastically in inches especially when you are strength training and putting on muscle as you are losing fat.

9. CELEBRATE YOUR SUCCESS.

Once a week I recommend ONE (1) “treat” meal or other small treat to celebrate sticking to clean eating throughout the week. This is NOT a “cheat meal.” This is a celebration of you successfully sticking to clean eating throughout the week and fitting in your workouts on most days.

10. Share your success.

This is where the magic happens. When you share with your family and friends the steps you have taken to be healthier they in turn become healthier. When the student becomes the teacher...this is when your journey is secured and you know that even if you have a slight hiccup that you can get right back on track because you know the process :).

GOOD LUCK! I would love to help you through this process in one of my online healthy lifestyle accountability groups that I host monthly.
