Crockpot Moroccan Chickpea & Sweet Potato Stew
Happy tuesday everyone
I have another super easy crockpot recipe for you.... It is vegetarian/vegan and fills the house with lovely exotic flavors from cinnamon, garam masala, cumin, and ginger. Yum. It is extra nice on these cold days we are having.
Here's the recipe! I hope you enjoy.
Crockpot Moroccan Chick Pea & Sweet Potato Stew
Ingredients
~1 large onion, diced
~3 Cloves Garlic, minced
~2 Cans of Chick Peas
~1 Cup Quinoa
~1 red pepper, chopped
~2 Sweet potatos, diced
~1 Can tomato paste
~1 32oz container of chicken or vegetable broth
~1 ½ tsp garam masala
~1 tsp cumin
~1/2 tsp cayenne pepper (adjust for less or more heat)
~1/2 tsp ginger powder
~1/4 tsp nutmeg
~1/4 tsp cinnamon
Instructions: Place all ingredients into the crockpot. Cook on low for 6-8 hrs. Stir and Enjoy!
