Veggies Most Turkey Sliders


Have you subbed ground turkey for beef yet?  I feel that ground turkey is a great substitute with less saturated fat. So, that being said, check out these cute turkey sliders!! These would be a great appetizer for a (hopeful) summer family bbq; or in our case, we had them for dinner last night! In addition to the cucumbers, there are diced veggies mixed into the meat. However, don't let that stop you from making a fresh salad or other veggie-heavy side dish to go with these guys. Enjoy!

Veggies Most Turkey Sliders



Ingredients

~1lb raw lean turkey

~1 egg

~1 cup red bell pepper, chopped

~3T red onion, finely chopped

~2T chopped fresh parsley

~1/4 tsp sea salt

~1/4 tsp black pepper

~2 medium cucumbers, sliced into ¼” round slices

~Block of cheese of choice, sliced in small pieces


Instructions

  1. Add turkey, egg, bell pepper, onion, parsley, salt, and pepper to a a large mixing bowl; using clean or glaved hands, gently mix until all ingredients are combined. 
  2. Roll turkey mixture into 20 balls, approximately the size of golf balls.  Flatten each ball to a ½” thick slider. 
  3. Heat a large skillet over medium-high heat; lightly coat with olive oil spray.
  4. Add patties to skillet cooking 2-3 minutes.  Flip; cook for an additional 2-3 minutes, or until turkey is cooked through.  When pressed, juices should run clear.  Repeat until all patties are cooked.  
  5. To build sliders, place 1 cucumber round on the bottom, add one turkey slider, top with  slice of cheese, and add the top cucumber round.  Hold sliders together with toothpicks. Recipe makes four servings with five sliders each.


*This turkey recipe also makes great meatballs!  Simply leave it in the golf ball shape and bake  at 350 degrees for 18 minutes.
