Fajita Rice Bowls

Camping Friendly Fajita Bowls
(Serves 4)

My family and I had a camping trip planned, and I always enjoy trying new recipes when we are out over the grill and campfire. I utilized my camping cutting board and knife as well as my camping stove to create a tasty dinner for the family as we were enjoying our weekend in nature.

  • 2 Cups Meat, grilled and sliced (Could use chicken, steak, or turkey cutlets)

  • 1 Tablespoon Fajita Seasoning

  • 1/2 Red, Green and Orange Bell Peppers

  • 1/2 Sliced Purple Onion

  • 1 Cup Shredded Cheese (I packed a block of cheese and a cheese shredder)

  • 1 Cup Salsa

  • Tortilla Wraps (Tortilla Land)

  • Hot Sauce

  • Salt and pepper

  • Olive oil or Coconut Oil

  • (I also suggest having foil for cooking purposes!)


To Prepare:

  1. Grill the meat: I used my camping cutting board and knife to cut a turkey cutlet into strips. However, for times sake, you could buy it already cut into strips- the butcher would do this upon request.

  2. Cut up the peppers and onions and saute them in a couple teaspoons of olive oil or coconut oil and add a touch of salt and pepper.

  3. While the meat and peppers are cooking, warm tortillas on the camping stove.

  4. Shred block of cheese for topping

  5. Lay out ingredients on the table so that the family can assemble their bowls to their liking!
