Italian Rainbow Quinoa Salad



Who doesn't love a bright and flavorful side dish? This quinoa salad is full of as many flavors as it has colors and makes a great addition to a meal or a dish to take to a party! The instructions are almost too easy as you prep and mix and voila!

Ingredients:

2 cups cooked quinoa (from 1 cup dry quinoa)
1 cup cherry tomatoes, quartered
1 can chick peas, rinsed and drained
1 cup cucumbers, diced
1/2 cup red onion, diced
1 cup sweet peppers, diced
2T fresh basil, finely chopped
1/4 cup Garlic Expressions Vinaigrette Dressing (or replace with your favorite dressing)

Combine all ingredients.  Enjoy!

Give this a try for a great addition to a main course or the next time you're taking a dish to get together with friends or family. Bonus points if it is in a cute, colorful dish to bring out the rainbow!
