Italian Turkey Meatballs
What's for dinner?
Italian Turkey Meatballs over spaghetti squash....husband tested and kid approved (both kids)!
As many of you mommas out there know it is near impossible to find a healthy recipe that everyone in the house likes. This one passed the test! The girls were both declaring their love for meatballs (didn't mention the fact that they were "healthy" meatballs). The best part is they took very little time to make and I was able to prep them ahead of time using the crock pot.
Ingredients:
~1 1/2 pounds of lean turkey
~1 medium onion finely diced
~3 cloves of crushed garlic
~1 tsp Italian seasoning
~1 T of FRESH basil (more if you really love basil)
~1T of clean spaghetti sauce for each meatball (no additives or preservatives) I use Kroger's Simple Truth Tomato Basil.
Directions:
Combine and form into meatballs. I used a leveled 1/4 cup measuring cup for each meatball. Two meatballs will equal one 4 oz portion of lean protein. Put each meatball into the crockpot and then put one tablespoon of spaghetti sauce on top of each. Cook on high for 4-6 hours or on low for 8 hours (while you are at work).
I served these meatballs on top of spaghetti squash that I steamed in the microwave. I just pierced the squash and popped it in the microwave for a few minutes on each side until tender to the touch. Cut in half. Scoop out the seeds. Shred the inner flesh with a fork. It will come out looking like spaghetti. You can also cut one in 1/2, scoop out insides while still raw, drizzle w/olive oil and bake at 350 for at least 20 minutes (or tender to touch) Let cook and shred insides w/a fork. My girls LOVE it.
