Turkey Black Bean Chili
I believe you can never have enough tasty, healthy, chili recipes! There's something so comforting about a hearty chili to enjoy with the family and it makes it that much sweeter when the ingredients are clean and healthy for everyone. I top this chili with a little cheddar cheese and a dollop of plain greek yogurt (an excellent sour cream substitute!)
Turkey Black Bean Chili
Ingredients:
3 15 oz cans black beans
1 lb ground turkey (cooked)
1, 28 oz can crushed tomatoes
1 chopped onion
1 cup canned pumpkin
1 red pepper, chopped
1 green pepper, chopped
2 Tbs chili powder
1 Tbs ground cumin
1 tsp salt
2 clove garlic, minced
Directions:
Add all ingredients to a large ziploc bag. Freeze until you are ready to prepare
Day of: Add 4 cups vegetable stock to the crock pot
Add ingredients and cook 6-8 hours on low (or 5-6 hrs on high)
To serve:
Top with greek yogurt, cheese and/or hot sauce.
Tip: Buy a block of cheese and shred (it melts so much better than pre-shredded cheese, which often can be caked with preservatives).
