Hearty Lentil Stew
Have you ever tried lentils? They are a great plant-based source of protein! We made this Hearty Lentil Stew this weekend as part of our freezer crockpot prep. The flavor was delicious and the kiddos even liked it!
Hearty Lentil Stew
Ingredients:
1 onion, diced
2 ribs celery, diced
1 red bell pepper, diced
2 cups peeled and diced (1/4 in cubes) sweet potatoes
1 cup red lentils
1/2 cup washed quinoa
3 cloves garlic, minced
1 tablespoon cumin
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon oregano
Directions:
-Place all ingredients into a ziploc bag and freeze until desired cook date.
-Day of, add 5 cups of stock (I used vegetable stock) to the slow cooker, then add the ingredients and cook for 6-8 hours on low (or 5-6 hours on high)
