Spicy Thai Peanut Buddha Bowl Mason Jar Salads
When you think of a quick salad on the go, you probably picture a standard bed of greens with a few cucumber slices, carrots, cherry tomatoes, and cheddar cheese. While there's nothing wrong with that standard salad, I'm here to tell you that salad on-the-go can be EXCITING.
Yes, salad can be exciting and jam-packed with flavor. That's exactly what this prepped Spicy Thai Peanut Buddha Bowl Mason Jar salad is. I made it part of my weekly meal prep and am enjoying it this week!
Salads don't have to be boring-- let's spice it up a bit!
Ingredients:
(Makes 1 Mason Jar Salad. Multiple Ingredients by number of Mason Jar Salads you would like to make)
~1T Spicy Thai Peanut Dressing (recipe at this link: http://www.cleaneatingmag.com/recipes/spicy-thai- peanut-dressing)
~1/2 cup of your favorite prepared grain (brown rice, quinoa, farro, etc)
~4 Oz chicken (or meat of choice)
~1/2 cup of shredded purple cabbage (can buy already shredded or shred yourself)
~1/2 cup of bean sprouts
~1/4 cup of shredded carrots
~1/4 cup of edamame, shelled
~1T Cilantro
~1T green onions, diced
~1T salted peanuts, chopped
Preparation:
1. Prepare Spicy Thai Peanut Dressing
2. Prepare your favorite grain per instructions
3. Grill chicken breasts, cut into chunks
4. Dice veggies
5. Layer ingredients as listed above with dressing on the bottom and peanuts on top.
6. Put on lid and store in fridge for up to 3-4 days.
7. When ready to eat: turn jar upside down and shake to distribute dressing.
Pour onto a plate or enjoy from the jar.
