Lemon & Asparagus Spring Side
SPRING IS IN THE AIR!
And it has me thinking about tasty recipes for the changing of the season! I love dishes that have a nice citrus flavor but are light and yet filling. This side dish is great to take to a friends' house or maybe to Easter dinner!
Ingredients:
~2 cups of your favorite grain (brown rice, quinoa, farro, freekah, etc.), prepare per instructions on package
~1 ½ cup asparagus, sliced in diagonal 1/2” pieces
~1 medium onion, finely chopped
~2T coconut oil
~1 celery stalk, finely chopped
~1/2 cup vegetable or chicken broth
~1 whole lemon, zest and juice
~salt & pepper to taste
~green onions & grated parmesan for garnish
Preparation:
1. Prepare your favorite grain per package instructions.
2. While the grain is cooking, heat the coconut oil in a large skillet. Add onions and celery until soft.
3. Add broth and your favorite prepared grain to the skillet. Stir well and season with salt and pepper to taste.
4. Remove from heat and add juice and zest from lemon. Stir
5. Garnish with grated parmesan and green onions. Serve warm.
