Garlic Lime Shrimp Skewers with Avocado Mango Salsa and Coconut Rice
Does this weather have anyone else thinking about the grill? How about an amazing pop of flavor with these garlic lime shrimp skewers with coconut rice!? OH. MY. GOODNESS! The family was WILD over these (I even got a "Delicious lunch!" text from my husband.) I have NO doubt that your family will love it too!
*Note: The rice makes a large batch, so you can freeze the leftovers for next time!*
Ingredients:
Lime Shrimp
~1 lb Shrimp
~2T olive oil
~1 Lime, Zest and Juice
~3 cloves of garlic, crushed
~Salt and Pepper to taste
Coconut Rice
~16oz Container of Coconut Water (reserve 1T for salsa)
~1 Can of Coconut Milk
~2 Cups Brown Rice, Quinoa, or your favorite grain
Avocado-Mango Salsa
~2 Mangos, peeled and diced
~1 Avocado, diced
~1/2 Large red pepper, diced
~1/4 cilantro, chopped
~1/3 cup red onion, diced
~1T Fresh Lime Juice
~1T Olive Oil
~1T Coconut Water
Directions:
1. Cook your rice or your favorite grain per package instructions. Ensure you reserve 1T of coconut water for salsa.
2. Combine olive oil, lime zest, lime juice, garlic, salt, and pepper and pour over thawed shrimp. Toss to coat. Put Shrimp onto skewers and grill a few minutes each side.
3. Place avocado and lime juice in bowl. Toss to coat avocado in lime juice. This will help to prevent browning of the avocado.
4. Add remaining ingredients to avocado. Stir gently to combine.
5. Plate and Enjoy!
