Some things are just more fun miniature! That's why I loved making these mini tacos for the family this weekend! I was inspired by a recipe I found on Super Healthy Kids, but made some tweaks to make it my own.
Ingredients:
- 3 tsp cumin
- 3 tsp smoked paprika
- 2 lb turkey tenderloin
- 1/2 cup honey
- 1/4 cup fresh lime juice
- Tortilla Land Tortillas (these are made of whole wheat flour and have only 4 ingredients!)
Mango Salsa:
- 1/4 Cup Fresh cilantro
- 2 Cups Shredded Cabbage
- 1 Cup Thinly Sliced Mango
- Juice of 1 Fresh Lime
- In a small bowl combine the cumin and paprika. Rub onto turkey loin, and place in slow cooker.
- In another small bowl whisk the honey and lime juice together.
- Pour over turkey in the slow cooker. Cook on low for 6-8 hours.
- Shred the turkey using two forks and mix with the juices inside the slow cooker.
- Mix all the ingredients to create mango salsa and set aside for later.
- Using a circle cutter, cut out mini tortillas from a large tortilla (I made 4 minis from 1 regular Tortilla Land tortilla). Heat in a pan until warm.
- Spoon the turkey into warmed tortillas and top with mango salsa.
- Enjoy!
