Loaded Carrot Apple Clean Eating Muffins
There's just something about a tasty, warm muffin, isn't there? Often we see muffins as those baked goods treats that can be loaded with sugars, but that doesn't have to be the case! Yes, you can have your muffin and eat it too! These are loaded with nutrients and vitamins from the carrot and apples and with using oatmeal as the base you can't go wrong!
Loaded Carrot Apple Muffins
Ingredients
~2 cups of oats, blended to a flour
~1/2 tsp baking soda
~1 tsp salt (reduce for lower sodium)
~1 cup applesauce
~1/2 cup plain greek yogurt
~1/4 cup Honey
~2 eggs
~1 tsp vanilla
~1/4 cup shredded unsweetened coconut
~1/2 cup unsweetened dried apples, chopped
~1/4 cup carrots, finely shredded
~2T salted sunflower seeds
Directions
1. Preheat oven to 350 degrees.
2. Blend oats and pour into a mixing bowl.
3.Mix salt and baking soda into oats and set aside.
4. Blend applesauce, yogurt, honey, eggs, and vanilla. Pour blender contents into the oats in the mixing bowl. Stir to combine.
5. Add coconut, dried apples, carrots, and sunflower seeds. Mix to combine.
6. Spray a mini muffin pan to prevent sticking. Recipe will fill a two dozen mini muffin pan or a one dozen regular muffin pan.
7. Cook for 12 minutes. Check center to ensure cooked through (may need longer for the regular sized muffins).
8. Enjoy plain or with a little homemade apple butter or honey.
