Turkey, Kale, Quinoa Crockpot Stew
Need a healthy weeknight recipe that takes no time at all?
Place all ingredients in crockpot:
~1 medium onion diced (approximately 1 cup)
~1 lb lean ground turkey
~1/2 cup uncooked quinoa
~1 cup of shredded carrots,
~1 10 oz bag of frozen chopped kale (or 5-6 fresh kale leaves deveined and chopped)
~1 can petite diced tomatoes
~4 cloves of crushed garlic
~1tsp of Italian seasoning
~ 32 oz container of chicken broth
~salt and pepper to taste.
Cover and cook on HIGH 3 1/2 - 4 hours or LOW 7 - 8 hours.
Delicious!
