Today on the blog we have a super quick & easy dinner recipe. Can I just say that I am OBSESSED with one pan recipes? Seriously can't get any easier than this! Best of all, you can put parchment or aluminum foil down on your sheet pan which makes clean up really fast. Roast whatever you have on hand~ I'm partial to chicken and broccoli right now personally. And besides, who wants to spend tons of time cooking during the summer when you can be at the pool instead?? Hope you enjoy and let me know if you try out this recipe!
Ingredients:
~1.5 lbs lean protein (I used chicken)
~Tons of colorful veggies (I used used one red pepper, one head of broccoli, handful of chopped fresh asparagus)
~2 sweet potatoes
~1/4 Cup olive oil
~1 tsp basil, parsley & oregano (or seasoning of choice)
~Salt & pepper to taste
Preparation:
- Cut chicken (or protein of your choice) into 1" cubes.
- Cut veggies & potatoes and then toss with olive oil, dried basil, parsley, and oregano.
Sweet potatoes are an excellent complex carb. You could sub red potatoes, or omit potatoes and serve with brown rice or quinoa.
THAT'S IT! Seriously, it is just too easy.
