Stuffed peppers are one of those foods that I always forgot I love! I love using peppers of every color... it is such a fun meal! Stuffed peppers usually have meat in them but this recipe is extra nice because it's vegetarian friendly.

INGREDIENTS:
~4 Multi Colored Peppers (cored, seeded, and cut in half)
~2 Cups Brown Rice, cooked
~1 Can of Black Beans
~1 Cup of Frozen Corn
~1 Medium Onion, finely Diced
~1 Cup Salsa
~2T Fresh Cilantro, diced
~2tsp Chili Powder
~1 tsp Cumin
~½ tsp Salt
Garnish
~½ cup Shredded cheese, (1T for the top each Pepper half)
~¼ cup Green onion diced,
Instructions
- Preheat oven to 350 degree.
- Steam Peppers: Put halved peppers cut-sized down on a plate with a little water on the plate. Put another plate on top and microwave for 4-5 minutes until peppers are soft. Put peppers cut sized up in casserole dish.
- Mix remaining ingredients (except cheese and green onion) into a bowl. Fill each pepper to the top. Approximately ½ cup of stuffing per pepper.
- Garnish with shredded cheese and green onion.
- Bake at 350 degrees for 20 minutes.
- Enjoy!
