Almond Joy Muffins


Is candy starting to be EVERY WHERE YOU LOOK?

I get it. It's starting for us, too. Trick or treating is here or just on the horizon... and it's so normal to have stacks of sugary sweets everywhere you look. But the sad reality is that it's not just cane sugar ~ there are lots of other scary ingredients in this candy...including high fructose corn syrup and artificial colors and flavors. Those aren't helping ANYONE! I believe it's possible to stay on track this holiday season. You can be healthier & fitter going into 2018 than you are right now. You don't have to gain 10 lb over thanksgiving and christmas. You need healthy alternatives.

Enter, this muffin recipe... it's amazing how making things like this will trick your mind that you are having something totally indulgent. We love making healthy muffins in my house because they are a quick snack. It's a great treat and I hope you try it.

Here's the recipe:

STEP ONE: Pulse in blender until combined into a flour consistency:
~2 Cups of Whole Oats
~1/2 teaspoon of baking soda
~1/2 teaspoon of baking powder
~1/2 teaspoon of salt
*pour blended contents into bowl and set aside

STEP TWO: Blend the following in blender until combined
~3 ripe bananas
~2T honey
~1 cup of plain greek yogurt
~1 egg
~2tsp Pure Almond Extract
*pour blender contents into bowl of oat flour mixture and stir

STEP THREE: Stir in the following
~1/3 cup of chocolate chips
~1/3 cup of unsweetened shredded coconut

STEP FOUR:
Preheat oven to 350 degrees. Spray a 12 cup muffin pan. Fill muffins with oat
muffin batter. Top with a few chocolate chips and a pinch of coconut. Bake for 16-
18 minutes. Allow to cool. Enjoy! :)
