Easy Crockpot Chicken and Rice Stew
Hi all! :) I wanted to share another super easy clean eating crockpot recipe with you. I've been really feeling the chicken and rice stew. The weather is FINALLY starting to get chilly here and in true Ohio fashion... it's getting cold too fast for my liking!! My way of dealing with that to eat lots of stew! Am I alone?? Probably not :)
Anyway, make this stew on a cold morning before work and it will be ready when you get home. It's great because really, you can add any extra veggies you might have on hand. Seasonal Fall veggies like squash, parsnips, mushrooms, etc, would work great too!
Here's the recipe:
Combine in crockpot:
~One container of low sodium Chicken Broth
~Two large chicken breasts
~One bag of frozen soup veggies
~One onion, chopped
~one cup of brown rice
~2 tsp cumin
~1 tsp Italian Seasoning
1. Stir above ingredients in crockpot, put on high, cook for 3-4 hours (or low for 6-7
hours) until rice is fully cooked.
2. Remove chicken breast and cut into chunks or you
could shredded the chicken. Return the the chicken to the crockpot and stir.
3. Salt and pepper to taste.
4. To make into a thicker stew-like consistency take one cup of milk and mix in 1T of
arrowroot flour (or cornstarch). Pour this thickened milk into the crockpot. Stir
and allow to cook for a little longer. This will start to thicken the soup into a stew.
