
I have THE best side dish / main meal for you today. It so so easy and yummy to whip together, and a great way to make sure you are getting your veggies in.
Here is the recipe :)
Basil & Feta Cabbage Potatoes
Ingredients
~2T olive oil
~one bag of mini red potatoes, cut in half
~one bunch of asparagus, cut in 1/3rds (optional)
~one medium head of cabbage, sliced length wise
~one container of feta cheese, crumbled
~1T fresh basil, diced fine
~salt and pepper to taste
Directions
1. Preheat oven to 400 degrees. Put potatoes and asparagus into a bowl and toss
with 1T olive oil. Put potatoes and asparagus onto a sheet pan with aluminum foil.
Place into oven for 20 minutes. Shake pan half way through.
2. While potatoes and asparagus are roasting in the oven, turn your attention to the
cabbage, which will cook on the stove. Put 1T of olive oil into a deep pot. Place
sliced cabbage into pan and stir until cooked down. Monitor and stir periodically
until cabbage is finished.
3. Once finished cooking, combine the cabbage, potatoes, and asparagus into a bowl.
Add the feta cheese, basil, and salt and pepper to taste. Toss all ingredients together
and serve. Enjoy!
