Crockpot Chicken Taco Stew

Need a great comforting dinner idea for these cold winter nights??

I have just the thing for you. You know I love a good crockpot recipe, but this one really hits the spot. It has lots of plant based protein from the quinoa and black beans, plus you can control the level of sodium in your food. You could add peppers and spinach or your favorite veggie of choice to really bulk it up.

I've included the recipe for the taco seasoning, too! Try making your own... it is so easy and you won't have to buy taco seasoning for months!

Here is the recipe:


Ingredients

~One 32 oz. container of low sodium chicken broth
~2 Large Chicken Breast, chunked
~One large Sweet potato, diced
~One Medium onion, diced
~1/2 cup quinoa
~one can of black beans
~one cup frozen corn
~2T Taco Seasoning

Taco Seasoning Ingredients:
~1T Chili Powder
~1 ½ tsp cumin
~1/2 tsp paprika
~1/2 tsp tsp salt (less for lower sodium)
~1/4 tsp garlic powder
~1/4 tsp onion powder
~1/4 tsp oregano

Combine all ingredients into a crockpot and put on low for 6-8 hours or high for 3
hours. Serve with shredded cheese on top (optional).
