Grilled Lemon Chicken-
Husband Tested. Kid Approved. This chicken was incredibly flavorful-- you HAVE to try this one! This is going to be an ongoing family favorite in the Zelenak house!
Ingredients
1 pound – chicken breast
2 tablespoon – olive oil
2 medium – lemon
1 tablespoon – lemon peel, raw
1/4 teaspoon – salt
1/4 teaspoon – black pepper, ground
Optional Dipping sauce (Although the chicken has so much flavor itself, you don't even need a sauce!)
1 cup – Greek yogurt, plain
2 clove – garlic
1 tablespoon – mustard, dijon
1/2 medium – lemon
1/8 teaspoon – salt
1/8 teaspoon – black pepper, ground
Directions
-In a large mixing bowl, whisk together olive oil, lemon juice (about 1/4 cup), lemon zest, salt and pepper.
-Place chicken in the bowl and marinate in the refrigerator for at least 30 minutes.
-To make the dipping sauce (optional), in a medium bowl, whisk together yogurt, garlic, Dijon mustard, lemon juice and lemon zest. Season with salt and pepper, to taste.
-Prepare grill for direct grilling over medium-high heat.
-Brush and oil the grill grate.
-Place the chicken on the grill directly over the fire and cook until the juices run clear and the chicken is cooking through, about 5 to 8 minutes on each side.
Serve grilled chicken with your favorite side dish (I love grilled asparagus and fresh berries).
