Butter Chicken



We all know that there are so many ways to enjoy chicken-- but if you're anything like me, you're always looking for new ways to prepare chicken breast. Don't the the name fool you-- this crockpot recipe is actually full of healthy ingredients but is also bursting with flavor! As part of my freezer crockpot series, this can be prepared and then frozen for convenient preparation on the day you want to enjoy it!

Butter Chicken

Ingredients:

-2 pounds boneless skinless chicken thighs or breast, cut into bite-size pieces
-1 15 ounce can diced tomatoes
-1 15 ounce can coconut milk
-3 cloves of garlic, minced
-1 onion, diced
-2 tsp Garam Marsala
-1 tsp curry powder
-1/2 tsp salt
-1 tsp pepper
-Green onion (to garnish)

To make:

Place all ingredients into a gallon-size ziploc bag and freeze. On the day you wish to prepare it, place ingredients into crockpot and cook on low for 8 hours. Serve with quinoa and green veggies. Top with green onion.
