Cilantro Lime Chicken-- Freezer Crockpot Meal



Something I love about these frozen crockpot meals is not only are they easy and quick, but you don't have to sacrifice good flavor! Our family always loves a juicy and tasty chicken recipe, and this one did NOT disappoint. I prepped the meal on Sunday and our family pulled it out later in the week to enjoy-- I just placed it in the crockpot before work and came home to a delicious smelling house and a delicious tasting dinner!

Cilantro Lime Chicken with Corn and Black Beans

Ingredients:

-2 pound boneless skinless chicken thighs or breast
-1 cup corn
-1 15 oz can black beans
-1 orange bell pepper, diced
-1 yellow bell pepper, diced
-1 onion, diced
-Juice from 2 limes
-2 tbs chili powder
-1/2 tsp salt
-1 tsp cumin
-1/2 tsp black pepper
-2 tbs fresh chopped cilantro

To make:

Place all ingredients into a gallon-size ziploc bag and freeze (keep the chicken at the top of the bag so that it will be at the bottom of the crockpot. On the day you wish to prepare it, place all ingredients into the crockpot and cook on low 6-8 hours or high 5-6 hours.
