One-Pot Moroccan Chicken Stew









Even a "fancy" meal can be easy to prep and not take too much time! The ingredients make an amazing smooth flavor and with one pot, you'll be having the house smell amazing and be ready to eat before you know it!

Ingredients:

~2 cups chicken or vegetable broth
~1/2 cup of quinoa
~2 cans of garbanzo beans
~1 ½ lb of chicken breast, cut into stew pieces
~1 can of petite diced tomatoes
~1/2 cup of red onion, diced
~1 yellow pepper, diced
~1/2 cup unsweetened raisins (Dole makes an organic raisin that does not have any added sugar
~3 cloves of garlic, minced
~1 ½ tsp of cumin
~2T tomato paste
~2T peanut butter

Preparation:

1. Bring 2 cups of broth to boil.
2. Add in quinoa and simmer for ten minutes.
3. Put in remaining ingredients (except peanut butter) and cook until chicken is done (approximately 8-10 minutes).
 4. Remove from heat and stir in peanut butter.
5. Garnish with green onions or cilantro and serve.  Enjoy!
