Meal Prep Burrito Bowls

I don't know a single soul that doesn't love a good burrito bowl! Seriously, what is not to love when you combine taco seasoned chicken, delicious brown rice and beans... and those roasted peppers an onions.... top it off with cilantro and fresh lime juice and you have the perfect healthy delicious meal?!


I meal prepped 3 burrito bowl lunches for Paul and three for me this week. They were delicious and I am super sad they are all gone.

The best part? The prep was super easy!

Ingredients:
~1 ½ pounds of Chicken Breast
~4 Large Multi Colored Peppers, sliced
~1/2 Cup Red Onion, Sliced
~1T Taco Seasoning (homemade recipe below)
~1 cup Salsa
~1 1/2 Cups Prepared Brown Rice
~1 Can Black Beans
~Cilantro
~1 lime, sliced into 6 wedges

Preparation:
1. Preheat oven to 350 degrees. Place slivers peppers, slivered onions, and chicken breasts all on a cookie sheet.
2.Sprinkle taco seasoning over chicken breasts and divide the salsa over the chicken breasts. Put in the oven for 20 minutes
3. Cut chicken to ensure it is cooked through. Slice Chicken into strips.
4. Assemble the following into Tupperware to go contianers: ¼ cup of cooked brown rice, ¼ cup of black beans, 4oz sliced chicken, ½ cup of peppers and onions, cilantro to taste, and a slice of lime. This will make 6 to go lunches. That will stay fresh up to
4 days after being prepared.

This recipe gives my husband and I each three lunches for the beginning of the busy work week.
Enjoy!
Make your own jar of Taco Seasoning
~1/2 cup Chili Powder
~¼ cup Cumin
~4tsp Paprika
~4tsp Salt
~2tsp Garlic Powder
~2tsp Onion Powder
~2tsp Oregano
**combine all of the spices and store in an air tight container. Use 1 T in the above
recipe.
