Clean Eating Pumpkin Chocolate Chip Muffins

🍁🍂 It's starting to feel like Fall here! The mornings have been crisp and the leaves are slowly starting to turn colors.

Fall also means... pumpkin everything!  

I love this quick & easy snack recipe because it's combines 2 of my favorite things: chocolate and pumpkin. Yum 


But you can feel good about giving them to your kiddos because it's not full of sugar and artificial ingredients. Just clean, real food

Clean Eating Pumpkin Chocolate Chip Muffins


Ingredients:


~2 cups Oats

~1/2 tsp salt

~1/2 tsp baking soda

~1 tsp pumpkin pie spice.

~one ripe banana

~one 8oz container of canned crushed pineapple in natural juice

~one Tablespoon of honey

~1 cup of plain creek yogurt

~2 whole eggs

~1/2 cup pumpkin purée

~chocolate chips

Preheat oven to 350 degrees.


Instructions:

  1. Blend Oats,  salt, baking soda & pumpkin pie spice. Set aside in a bowl.

  2. Blend banana, crushed pineapple in natural juice, honey, greek yogurt, eggs, and pumpkin purée.

  3. Pour into dry ingredients. Fold till combined.

  4. Scoop into sprayed or lined 12 cup muffin pan.

  5. Push in 4-5 chocolate chips into the top of each muffin.

  6. Bake 15-18 minutes. Cool and Enjoy!
