Crockpot Sweet Potato & Quinoa Southwest Stew


Happy tuesday, everyone!

I am back from a busy weekend out of town... so I wanted to a quick & easy crockpot recipe. We have been especially liking southwest flavors lately. Enter this recipe...it is so yummy!

Prepare it at night or before you leave for work in the morning and have a yummy dinner waiting for you!


Here's the recipe.

~1.5 lbs of chicken breast
~1 cup uncooked quinoa
~1 can black beans
~2 medium sweet potatoes (~3 cups)
~1 can of petite diced tomatoes
~1T minced garlic
~1 small onion, diced
~2T of Taco seasoning (**For my homemade recipe, look below!)
~One 32 oz container of chicken broth


Directions:
1. Put all ingredients in crockpot and put on high for 3-4 hours.

2. It is finished when chicken is able to be shredded.

3. Pull out the chicken breast shred the chicken and return the shredded chicken to the crockpot.

4. Switch the crockpot to “keep warm.”
5. Top with shredded cheese and a squeeze of lime. Enjoy!

Make your own jar of Taco Seasoning:
~1/2 cup Chili Powder
~¼ cup Cumin
~4tsp Paprika
~4tsp Salt
~2tsp Garlic Powder
~2tsp Onion Powder
~2tsp Oregano
**combine all of the spices and store in an air tight container. Use 2 T in the above recipe.
